Meet the Maker: Letitia Clark

Letitia at her home in Sardinia, the place that inspired many of her ‘For the Love of Lemons’ recipes.

‘For the Love of Lemons’, Letitia’s fourth cookbook is both a very personal and practical exploration of the much-loved fruit. The recipes are influenced by her childhood in rural Devon, the knowledge and food shared in London kitchens, and the bright flavours of Sardinia - where she now lives. Think creamy lemon linguine; chicken, honey and preserved lemon tagine, and elderflower and lemon iced buns.

Ahead our upcoming talk (book your tickets here), we asked Letitia a selection of zesty questions to inspire our culinary enthusiasts ahead of the summer season.

1. What inspired you to focus on lemons as the central ingredient in your cooking?

They are the third most important ingredient in my kitchen, after olive oil and salt, and they deserve a book of their own! They are also delicious, joyful, and uplifting.

2. Do you have a favourite recipe in your new book?

It is too hard to choose one. I think the lemon coconut cake is a winner for a party, and the lemon mint almond pasta too.

3. How do you incorporate local, seasonal produce into your recipes?

I am very strict about trying to use what's in season and what's local, which can sometimes seem limiting but also forces you to be creative by default. My last book, 'Wild Figs and Fennel', was all about that. I try and work from the ingredient first, then think about what goes well with it. Questions then follow - How I could cook it? How I could serve it?
