Cedro - Citrus Medica: The Ingredient Edit

Cedro or Citron is an ancient citrus fruit, one of the original cultivators used to breed the modern citrus varieties of oranges, lemons and limes we are familiar with today. 

Originating as a small berry in the foothills of the Himalayas it has been cultivated  by ancient civilisations through millennia. Storing and travelling well due to its high essential oil content, it has been taken on a long journey, a story of human migration and plant breeding through history. 

There are several different varieties of Cedro. 

We are using Cedro Diamante;  grown only in and around the town of Diamante in the province of Cosenza in Italy where, thriving in the Mediterranean climate, it is the main agricultural crop of the region and has protected agricultural status. 

Growing to a significant size, sometimes as big as a football, it has  a deeply nobbled skin, rich in oil that develops as the fruit ripens from green to a deep yellow colour. Its small fleshy centre yields little juice: it is the thick white pith and oil infused zest for which it is valued. We have simply dusted it with a little sugar to balance the acidity. 

Together with first season forced rhubarb, Cedro makes a very special, healthy and interesting addition to our breakfast pancakes.
