Each of their trees can absorb up to 1.5 tonnes of carbon in its lifetime, compared with the 2.5kg of carbon it takes to make one of their bottles, making them significantly climate positive.
This Kitchen Garden cocktail is herbaceous and bold with a flavour punch. A kitchen garden martini inspired by the herbs we grow. We make our own vermouth using more than twenty botanicals but you can achieve a similar effect by infusing a white vermouth with three key herbs: fresh thyme, fennel seeds and sweet woodruff if you have it growing in your garden, use rosemary as an alternative.
Ingredients
30 ml Sapling vodka
25 ml infused vermouth
3 drops culinary sage oil
Thyme sprig to garnish
Method
To infuse the vermouth:
Pour the vermouth into a dish, add a few sprigs of thyme and sweet woodruff (or rosemary) and a sprinkle of fennel seeds into the oven at 60°c for two hours, strain when cool.
To make the cocktail:
Stir your ingredients, except the sage oil, with ice.
Strain into a martini glass and add three drops of sage oil.
