The Baa
Drawing inspiration from the Cotswolds’ famous sheep industry and wool trade, the Baa is situated in the old lambing sheds and is characterised by bespoke ‘sheep seats’ designed by Caryn Hibbert.
Bartenders create homemade cordials, shrubs and infusions which together with fresh flowers and herbs from the garden, form a botanical cocktail menu that tells the story of the land. the Baa is an elegant space to enjoy a coffee, lunch and a newspaper during the day or a fresh cocktail in the evening.
Our All Day Menu comprises of bar snacks and toasties, salads and soups for a perfectly comfy lunch served on low tables and soft seating.

We do not take bookings in this space. We are open in the day for both our residents as well as guests popping in. In the evenings, the Baa Bar is reserved for guests of Thyme and the Ox Barn.

Our seasonal martini style cocktails are inspired by botanicals.
We use the process of distillation, extracting flavour and scent from plants to create hydrosols. Similar to essential oils, but with a higher water content, these aromatic waters are capable of carrying subtle botanical fragrance and are the foundation of our house cocktails.

Bespoke Sheep Seats
Our sheep seats are handmade in the Cotswolds by local craftspeople based at the Pangolin workshops in Chalford and upholstered by Richard James in nearby Nailsworth. The finishing touch is a solid silver ear tag by Kristina Charrington, identifying each individual with a Thyme Sprig and a unique identification code.
The classic design of our sheep is based upon the breeds of our two flocks: the large, white Cotswold, also known as Cotswold Lions, and the smaller Black Welsh Mountain.
Our sheep are handmade to order, meaning every one is unique; no two models and fleeces are the same.
