About Thyme
Let Caryn, our Founder, introduce you to the story behind Thyme, with the help of her children Camilla Hibbert, General Manager, and Charlie Hibbert, Chef Director of the Ox Barn.
Thyme has always been a family business, starting as a collaborative project between Caryn and her father Michael Bertioli to restore the old working farm buildings. It is still family-owned and run today, and lives and breathes the founding ethos of slowing down and reconnecting to nature.
